Cauliflower Tater Tots
Carb free tater tots?? What!? These are super delicious! Especially when you have cut out carbs and want a lower carb version.
Servings: 20 tots
Equipment
- Food processor or hand grate
- Muffin tins
Ingredients
- 1 head cauliflower (shredded in a food processor using a grating blade or a hand grate)
- 2 eggs
- 1/2 t paprika
- 1/4 t cayenne
- 1 jalapeño (minced (optional))
- 1 t olive oil
- 1 c Colby jack cheese
- 1 t salt
- 1 t pepper
Instructions
- Pre-heat oven to 400 degrees.
- Put grated cauliflower in a kitchen towel. Salt the cauliflower and let sit for 10 minutes.
- Squeeze out all the liquid you possibly can so they brown.
- Mix all ingredients to combine.
- Smash mixture into greased muffin tins. About 1/4” or so thick.
- Cook until nicely browned.
